Mini Pizza Bites on Menu Monday

It’s that time again! Last week I held pretty true to the list I made for my week, this week I’m going to try to make recipes I haven’t posted before and hopefully photograph them as I make them so I can add them to the list!

This Week’s Menu (June 25 – July 1)

Monday – Old School Chicken Pot Pie and Caramel Frappuccino Cupcakes for dessert

Tuesday – Coconut Chicken with Potato Rings and Battenburg Cake for dessert

Wednesday – Mini Shepherd’s Pies and Lazy Cake Cookies for dessert

Thursday – Codren Bleu with Roasted Potatoes and Cinnamon Baked Donuts for dessert

Friday – Calzoes with Cheese Bites and Pull Apart Garlic Bread and Cookie Dough Brownies for dessert

Saturday – Throwback Burritos and Snickerdoodle Cake for dessert

Sunday – This is Canada Day so we’re going all out
   Breakfast – Pancakes with real maple syrup for the kids, Cream of Wheat for us and pemeal bacon for everyone!
   Lunch – Poutine!!
   Dinner – Pemeal Bacon on a Kaiser* and Ice Salad, Nanaimo Bars and Butter Tarts for dessert

*this is crazy regional to Toronto and specifically St Lawrence Market but that’s Canada to me

A few weeks ago, I made mini chicken pot pies and ever since then the kids have been encouraging me to make mini versions of other dinners they love! So far I’ve made mini chicken hot pockets and these mini pizza bites. I served these with pizza sauce to pour over top or, as Wee One #3 chose to do, dunk in. Next time I will add some sauce to the mini bites before I cook them and see how that works out. This week I’m making Mini Shepherd’s Pies!

Mini Pizza Bites

Your homemade pancake batter (or the batter prepared from a box or Bisquick or whatever)
24 slices pepperoni (or more depending on how much you love pepperoni)
1 cup shredded Mozzarella cheese
1-2 cups pizza sauce

Spoon about 2 tablespoons of the batter into each (lightly greased) muffin cup, and top with cheese, pepperoni and more cheese.

Pour about 1 tablespoon of the batter over the pizza bites (adding more or less depending on how doughy you like your pizza). Bake for about 20 minutes at 350 and serve with dipping bowls of pizza sauce!

Adventures in Venice Beach - Part 1

Venice is definitely one of my new favorite places in LA. It’s weird and crazy and full of tattoo shops and street vendors and smoke shops and about eleventy billion different tshirt spots and rando trinkety places. Beyond that though, you’ll see clean cut tourists posing in front of beautiful graffiti, and seriously buff locals doing chin ups on street poles (there is a small muscle beach-syle outdoor gym there too but it’s full 90% of the time) – and of course there’s the beach!

We stopped at Santino’s Panineria for lunch and had pizzas with prosciutto – and Fanta oooof course. All 7 of us liked the pizza and the restaurant itself was pretty cool. It’s small and eccentric (much like Venice itself). I will be going back to this place again for sure. Next time though, I’d like to try the Sangria everyone raves about at this joint.

Chicken Pizza with Caramelized Onions

I have a bookcase full of cookbooks, binders full of recipes pulled from foodie magazines and an alarming number of pins and bookmarks of recipes to try. And yet? The very best pizza dough recipe I’ve ever made / eaten came from a grocery store flier! I know right?! Way to go Foodland!

Obviously, my kids see me in then kitchen everyday. Sometimes, I’m messing around and making something utterly ridic and other times I’m making something painfully run of the mill like stew or chicken alfredo or something. No matter what I’m up to though, at least one of them wants to be a part of the action. Usually, I can find some task to delegate to them, so they are helping without helping so much I have a serious mess on my hands. But then there are times when they want to do something that screams let them make a serious mess in the kitchen, and so I do.

When we make pizza, they are hands on the whole way. They help knead the dough, they roll out their own pizzas and they choose, chop and put on their own toppings. They even help each other, it’s the cutest thing. It is a disaster too though, like, I can’t even understand how they make such a mess. But. They are so happy while they do it and when it’s time to eat their creations, they’re all so proud of themselves!

Dough:
1 cup very warm water (120F-130F)
1/2 teaspoon salt
2 1/4 teaspoons instant yeast
3 1/4 – 3 1/2 cups flour
1/2 teaspoon olive oil
Pizza:
1 cup shredded cheese (your choice)
1 chicken breast, cooked and cubed
1 onion, chopped and caramelized
1 teaspoon rosemary

Combine the water, salt and yeast. Add 1 cup of flour and mix with a wooden spoon until you have a loose batter.

Add another two cups of flour and mix a few minutes more until it looks a little ragged. If it feels too stuff add a little water (up to about 1/3 cup). Now attack it with your electric mixer and dough hook attachment. Let it sit for a bit while you gather toppings.

The only real tip worth sharing when it comes to caramelizing onions is that you can’t possibly rush it. It’s all about bringing out the natural flavor of the onion, so you’re going to have to cook them for about 30 minutes in a little olive oil. If your burner is too hot, you will have to add a little water to keep them from drying out. Now having said that, if you like your onions sweet, you can always add a pinch of sugar to help that along.

Roll out your dough to whatever size you’d like, either on a lightly floured counter or between sheets of parchment paper. We all made little individual pizzas. We baked them for about 20 minutes at 375F and they turned out great! I love, love, love this dough recipe.
