Oreo Kisses, a Smore Package and Rice Balls with Hidden Veggies

There has been a lot of cookie baking going on around here and actually, a whole lot of other treat making and painfully-from-scratch cooking going on as well. So much that I’m going to just have to post a heap of my queue as thumbnails to get through it all so I can post the new stuff. It’s not that my kitchen creations (and my craftyness) this past winter/spring/summer are not amazing, because naturally I think they are lol, but there is so much more amazingness on the way!

As with many of the whimsical creations coming out of this kitchen, these adorable little creations are courtesy of Bakerella! They could not be easier and as usual, these are amazing. I made them as Valentine’s Day treats for Wee One #1’s class party. I wrapped them in foil and made little tags that said ‘Happy Valentine’s Day’ for him to give to his classmates with his paper cards. I wasn’t there, but he said they were a hit – despite not looking at all like the kisses I had intended them to look like. Whoops.
There are so many cute smore-themed ideas for end of school year gifts for teachers. I actually made this one for our principal, because she has really gone out of her way for us more times than I can ever properly thank her for. I first saw this idea over at Back Porch Creations and I loved it, but I needed my packaging to be a little more girlie than that.
I made these (recipe #14 from Jessica Seinfeld’s Deceptively Delicious) alongside the Italian Meatloaf from the same book. The meatloaf was ok, but I had seconds of these rice balls! They’re not a quick fix though, they take some effort to make, but just like everything else in life, when does quick and easy usually equal amazing? Alonst never, especially in the kitchen. These rice balls are actually loaded with chicken, sweet potato and either spinach, broccoli or butternut squash puree – I used spinach. I also used whole wheat breadsrumbs instead of whole wheat cracker crumbs.

I also just found out a few minutes ago that today, August 30, is National Marshmallow Day. What?! How did I not know about this?! I will whip up something with marshmallows in it for dessert – what are you making to celebrate now that you know? 😛

Deceptively Delicious Doughnuts and My New Canon Rebel

During the construction of the new site, I was still cooking and baking up a storm in my kitchen so I have about 5 months of recipes to show you! I wont show you all of them at once, don’t worry! I’m going to stick to one or two a day until I’m caught up. Today I posted the 10th recipe I’ve made from Deceptively Delicious! Also during the redesign, just a couple of weeks ago actually, my amazing husband and I celebrated our 11th wedding anniversary. I’ll spare you the painful squinting at my picture to guess how old I am (30) and I’ll save you the math (I was 19 when we got married). Recently my husband bough himself a car he has wanted for years and years and years so for my anniversary gift, he bought me the snazzy camera I have wanted for years and years and years – the Canon Rebel. Since I only got it two weeks ago, most of the upcoming recipes you’ll see photos of were taken with my point and shoot Samsung. I am so excited to share photos from the new camera but I don’t want to spoil surprises for new recipes. What’s an overexcited gal to do? Post pictures of my wee ones of course! Wee ones and silly indoor smores! I haven’t edited these photos in PS at all! They are just raw from the camera. Sooooo lovely. Best gift ever.

Wee One #1 needs a new nickname for the blog because he’s 10 now, and not so wee anymore. He is constantly taking pictures of me (trying to) take pictures of him. His iPod, by the way, he bought with his own money. I am always so proud of him for being such a great saver – but this is the most he has ever saved from allowance and he was so proud of himself when he went out with Dad to buy it. So rad!

Wee One #1

As I have mentioned over and over since we moved out here last year, there is a lake literally across the street from our house. We moved here at the beginning of the fall, and while we’ve enjoyed the outdoors and all the wide open space we have to run around and play we hadn’t been able to play in the water – you know since it’s Canada and all. It’s been nice and warm for the past few weeks though and I’m not exaggerating at all when I say that we’ve been going to the lake pretty much everyday. The kids get off the school bus, run inside for bathing suits and another hit of sunscreen and off we go! We hang out at the water till just before supper, walk back, wash up and eat.

I have to be creative with evening meals now since I am at the beach when I’d usually be prepping. So I tend to prep in the afternoon and just assemble when we get home, or I do the whole meal the night before and just reheat when we get back. It’s no fun to have the oven on in the summer anyway. I am super excited our new house has central air conditioning, but I wont abuse it by cranking the oven on a super hot day. I’ll share some of these easy summery recipes after I’ve caught up with my back posts, I promise. Here is a fun dessert we ‘make’ with the kids! I’ll post the quick little how to this week. Summer Roadtrip and Smores Pie

It is hysterically late to be writing this post now, but I made some fun treats worth talking about, and my Smore Pie is very photogenic. But we have to back up to a few treats before we went on a road trip to visit the husband machine’s family.

The last pie I made for a Stitch n Bitch before we left was #37, Raspberry Custard Pie, which I think is pretty self-explanatory. 😉

#37 – Raspberry Custard Pie

Crust:
1/4 cup butter, melted
1/-1/4 cups graham cracker crumbs

Topping:
1 pint raspberries
1/4 cup icing sugar
Filling:
1/2 cup sugar
3 tbsp cornstarch
1/2 tsp salt
4 egg yolks
3 cups milk
2 tbsp butter
2 tsp vanilla extract

1. Mix melted butter and graham crumbs, pat into pie pan.

2. Mix the sugar, cornstarch, salt, egg yolks and milk in a saucepan, bring to a boil slowly, over medium heat. Whisk the whole time! If you turn your back for a second you’ve burnt it. It gets thicker as it boils.

3. Remove from heat and immediately mix in the butter and vanilla, let cool slightly.

4. Pour custard into pie crust, arrange raspberries on top. Sprinkle icing sugar on top with a small sieve!

Once we got where we were going, I still wanted to bake, but no one eats sweets. My only opportunity to play around in the kitchen is when I’m making something for the kids and their cousins and long distance friends! First up was a BBQ night at one of the husband machine’s aunts houses (the man has a lot of aunts!), I made pie #38, Banana Ice Cream Pie. It’s the sort of pie children request over and over and over again because it is so ridiculously good!

    

#38 – Banana Ice Cream Pie

Crust:
1/4 cup butter, melted
1/-1/4 cups chocolate wafer crumbs
Filling:
2 bananas, sliced into circles
1 pint of something chocolately
1 pint of something lighter
1 jar sundae topping

This is less a recipe and more assembly instructions, really! Mix the butter and the crumbs and pat into a pie pan, spread half the sundae topping on the crust, arrange a layer of banana slices on top, then 1/2 the chocolatey ice cream on that, and half the other ice cream on that. Then do it again! I topped mine with leftover cookie crumbs and an Oreo. This pie works best in a deep dish!

Before we left for our trip, I had so busy with other things I wasn’t knitting much but I seriously made up for it while we were gone! I started my Tadpoles before we left, but I ripped through them on the first couple of days! They’re a fantastically belated birthday gift for one of my best friends. Happy Birthday Brigitte! <3

 

As I was weaving in the ends of Brigitte’s Tadpoles, wee one #1 asked me to knit him a pair of socks and he looked through Ravelry and decided on these cute ones called Air Raid. I made them in 5 days! It was a fun, quick pattern and made for 9 year old feet, so I had that going for me!

 

While already 5 hours from home, we took a little day trip to visit our good friends / former neighbors, who bought a cute house on a serious chunk of land in the middle of nowhere. The middle of nowhere both frightens and appeals to me, which also frightens me! We had a fantastic day, with a fire and Smores to top it off! I went into town with my friend Melissa to pick up a few things and I found this kit with a BBQ basket, a giant Jersey Milk bar, a pack of graham crackers and a bag of mini marshmallows. Genius!

The very next night we were all invited to a bonfire and more Smore making with old friends! To celebrate, I made #39 Smore pie! Essentially, it’s a graham cracker crumb and butter crust, with a chocolate pudding filling, topped with marshmallows and cookie crumbs. Wen I got it to the bonfire, it hadn’t had a chance to set, so we set it in the host’s fridge and promptly forgot about it. She took it out a couple of days later, after it had finally set up, she ate it! Apparently, it was delicious.

 

Our second day home from our summer visit up north landed on one of my best friend’s birthdays, so I gathered the usual suspects and we celebrated on the porch with Peanut Butter Chocolate Cupcakes (and Chocolate Cupcakes)! Naturally, that weekend’s Stitch n Bitch was dedicated to her as well, Happy Birthday Gill!

This is one of those pies I saw in the LCBO‘s Food & Drink magazine, marked it and it waited patiently for over a year until I finally baked it. Pie #40, Blueberry Honey Pie. This is just a typical blueberry pie with a couple tablespoons of honey in it, baked in a graham cracker crust. I was really all about the graham cracker crust this summer.
