  deceptively delicious doughnuts

Recipe number 10 this year from Deceptively Delicious, this was a huuuuuuge hit. All five of us loved these little treats. They honestly taste like a baked chocolate doughnut, but surprie - there's no chocolate (or even any cocoa) in them! The sweetness comes from the sweet potato and the treaty taste comes from the cinnamon. Plus kids will eat just about anything with icing sugar on it, wont they?

Doughnuts - from Deceptively Delicious (p. 160)
1/2 cup firmly packed brown sugar
1/2 cup canned pumpkin puree
1/2 cup sweet potato puree
1/2 cup milk
1 large egg
1 tbsp butter or Becel
1 tsp vanilla extract
1 cup flour I used whole wheat
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 cup icing sugar

As usual with these recipes, puree your veggies first. This is the sweet potato. Making this with fresh pumpkin is best, hands down, but you can use the canned stuff called for in the recipe.

First mix together the sugar, pumpkin and sweet potato purees. Then add and beat in the milk, egg white, butter or Becel and vanilla.

Next of course comes the flour, baking soda, baking powder and cinnamon. Mix it up till it's well blended!

Now put the batter into a pastry bag (a plastic sandwich bag with a hole cut in the corner works too). Putting the batter in the (pre greased) doughnut pan this way makes them come out really cute and with no mess! Bake at 350 for 20 minutes.

They pop out really easily! So cute! It's easy to eat about a million of them because they're small and tasty and since they're full of vitamin A, go nuts.
