The kids have been learning more differences between Canadian Thanksgiving and American Thanksgiving. Canadian Thanksgiving is all about the fall harvest and of course, American Thanksgiving is a celebration of the Plymouth colonists and Wampanoag Indians sharing a harvest feast. Similar, but not quite the same. So we've been learning some American history. Here's a little trivia that's new to me, this first breaking of bread between the colonists and the Native Indians took place in 1621, but it wasn't an official holiday until Lincoln declared it one in the middle of the Civil War in 1863. I wonder if it was a tradition for some people during those 242 years it wasn't an 'official' holiday? (read)
I made these (recipe #14 from Jessica Seinfeld's Deceptively Delicious) alongside the Italian Meatloaf from the same book. The meatloaf was ok, but I had seconds of these rice balls! They're not a quick fix though, they take some effort to make, but just like everything else in life, when does quick and easy usually equal amazing? Alonst never, especially in the kitchen. These rice balls are actually loaded with chicken, sweet potato and either spinach, broccoli or butternut squash puree - I used spinach. I also used whole wheat breadsrumbs instead of whole wheat cracker crumbs.(read).
I came across this recipe and had all the ingredients on hand. If I'm feeling it, I will often use this as an excuse to immediately get up and cook whatever I'm reading about and such was the case with this little carb pie. It smelled so good when it came out of the oven that instead of photographing it from a zillion different angles as I usually do, I sliced it up and we ate it. All of it. Even the wee-est wee one devoured it and she's not even a fan of squash! Ha! Amazing. (read).
This is the 7th recipe this year from Deceptively Delicious, and in our house, this lunch was a hit and miss. Wee Ones #1 and #3 ate it without any issue, but Wee One #2 (who is pretty defiant about just about everything) ate half of it and declared she didn't like it. The plus side here is that Wee One #3 had seconds and later wanted the leftovers for dinner! (read).
