I came across this recipe and had all the ingredients on hand. If I'm feeling it, I will often use this as an excuse to immediately get up and cook whatever I'm reading about and such was the case with this little carb pie. It smelled so good when it came out of the oven that instead of photographing it from a zillion different angles as I usually do, I sliced it up and we ate it. All of it. Even the wee-est wee one devoured it and she's not even a fan of squash! Ha! Amazing.
Line your greased pan with sliced potatoes in a pretty circle pattern (leaving enough aside for more layers depending on your pan and plans.
Stack your sliced squash on top in a similar circly pattern.
Drizzle with olive oil. 6 tsp is a guideline, don't be stingy.
This is when I mixed up the chopped green onions, parm cheese, flour, thyme, salt and pepper.
Toss it all together so the green onions are coated.
Sprinkle this on top of your first two layers of potato and squash circles. Then repeat with more potatoes & squash, then more olive oil and then more cheese mixture.
Cover the pan with foil and bake at 375 for about 40 minutes, then take off the foil and bake for another half an hour or so. So, so, so tasty!!
