Pink pancakes are another huge hit around here. I thought that once the kids discovered that the pink color came from beets but I was wrong! I had been making them about once a week for months before Wee One #2 came into the kitchen and saw me pouring the beet puree into the batter. She stood there looking confused and asked what the 'pink stuff' was. Without flinching, and as if I was talking about gumdrops or raindrops, I said 'Oh these, they're beets', and I went on mixing. She just shrugged her shoulders and that was that. Later, when I called all the kids to the table for breakfast, she announced to the others that the pink comes from beets but 'It's ok because they're super yummy!' I consider that a win!
3/4 cup water
1/2 cup ricotta cheese
1/4 cup beet puree
1 teaspooon vanilla
1/2 teaspoon cinnamon
1 cup homemade pancake mix
1/4 cup grated apple
cooking spray
1 tablespoon canola oil
maple syrup, fruit or icing sugar
In a food processor (a blender will work too), mix the water, ricotta cheese, beet puree, vanilla and cinnamon. Pour this into a mixing bowl and whisk in the pamcake mix and grated apple. Don't mix it too much, it's supposed to be a little lumpy. I don't think I have to tell you how to make pancake from this point, but make sure you use the cooking spray because it would be a shame for these babies to stick!
