  deceptively delicious banana bread

This is the 12th recipe from Jessica Seinfield's 'sneak pureed veggies to your kids' cookbook and it's another hit. It doesn't taste different from other banana breads, except maybe it's a little moister - which would be a point for not against it. I've said a few times now that since there are several recipes in this book I use all the time now, I keep a stock of pureed veggies in my freezer so I can make them on a whim (and also so I can plop, say a frozen cup of spinach, into a simmering chili like I did tonight), and having the pureed veggies on hand really makes the whole job a lot easier.

The kids didn't say anything was off or different from the usual banana bread I make and my husband ate it without comment - and when it comes to sneaking veggies into usual foods, no comment is a win!

Banana Bread - from Deceptively Delicious

Mix flours, baking soda, baking powder, salt and cinnamon first. In another bowl, mix the sugar and oil till they're combined.

Mash up your bananas! Puree your cauliflower (or pull it from the freezer before you start).

Into the sugar and oil mixture, add the egg whites, banana and cauliflower purees and vanilla. Mix, mix, mix!

Add the flour mixture but don't overmix! Pour the batter into your greased loaf pan and bake it at 350 for about an hour or about 30 minutes if you divide it into two smaller loaf pans.

That crack down the middle is so 'Granny's kitchen' to me. One day, I'll be a Granny, and I'll make this for my wee one's wee ones! :P For now though, I am perfectly happy to slice this up and serve it to my wee ones while they're still wee. <3
