I made these when I wanted to serve up something cute and simple, but that was a little more 'adult' than typical apps I make for the kids after school.
Cheese Stuffed Zucchini Rolls

3 small zucchinis
1 tablespoon olive oil
kosher salt
1/2 cup herbed cream cheese spread
Using a mandolin or a crazy good eye and a sharp knife, slice the zucchini into 1/4" thick slices. I made mine a little thinner.
Bake (or grill or fry) the slices with a little salt and olive oil until they're tender and browned a little.
Let the slices cool a bit before spooning about 1/2 tablespoon of the cheese on the edge of each slice. Roll up and secure with a toothpick.
