These are another piece of the trifecta of awesome that was my tart collection at our first American Thanksgiving. Half a dozen are made without any run and the other half are spiked with Sailor Jerry. If it wasn't for my friend Vanessa I may never have tried Sailor Jerry at all, but thanks to her it's my new favorite rum and I'm always up for baking with booze (that's not counting when I drink wine and bake...)!
Sailor Jerry Tarts based on Sailor Jerry's Pecan Pie
3 eggs
1 cup dark corn syrup
1 cup sugar
2 tablespoons Sailor Jerry's Spiced Rum
1/4 cup butter
1 teaspoon vanilla
1 cup pecans, chopped
1/3 cup chocolate chips
12 tart shells (baked)
So easy it's hardly a recipe! Preheat to 375 and whish eggs in a bowl. Add the dark corn syrup, sugar, Sailor Jerry, butter and vanilla and mix until blended. Stir in the pecans and chocolate chips and pour into baked tart shells. Bake for about 25-30 minutes and THAT'S IT!
