This idea was the next natural step I think, brought to me via Culinary in the Desert. The possibilities are endless, you can stick pretty much whatever you want in a cookie - and even if you repeated the surprise inside the cookie, you can put it in so many different kinds of cookies!! The original recipe has peanut butter in the dough as well as the filling - but no chocolate chips. So I didn't use any peanut butter in the actual cookie, but I did load it up with chocolate chips. Of course. I also replaced the icing sugar in the filling with brown sugar because as much as I love icing sugar, I just think brown sugar goes way better with peanut butter.
Peanut Butter Stuffed Double Chocolate Chip Cookies - adapted from Culinary in the Desert
Dough
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
8 tbsp unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 tbsp milk
1 tsp vanilla
1 cup chocolate chips
Filling
1/2 cup packed brown sugar
1/2 cup peanut butter
pinch salt
2 tbsp granulated sugar
Preheat oven to 350. First, whisk together the flour, cocoa powder, baking soda and salt.
In a larger bowl, beat together butter and both sugars until well mixed.
Now add the milk, egg and vanilla. Once it's combined, go ahead and add the chocolate chips.
Now add the smaller flour/cocoa bowl and mix again, just until combined.
Mix all the filling ingredients together.
I mixed it at really high speed for about a minute or so.
Roll into tablespoon sized balls and make an indent for the filling.
Do this over and over and over again.
Now, fill them all with the peanut butter filling mixture! And roll them up to hide the peanut butter as much as you can.
