This is the 3rd cookie this year, inspired by one of my fave bloggers, Bakerella. The original cookie that she was inspired by is called the Cowboy Cookie, this version has the addition of pink M&M's or Smarties and boom - Cowgirl Cookies! As usual, Bakerella is full of neat ideas. In her post on this cookies, she suggests using different coloured candies for different holidays - like orange and black for Halloween and red and green for Christmas. Cute!! She also included a free printable tag for gifting these cookies.

Cowgirl Cookies - from Bakerella
1 1/3 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup quick oats
3/4 cup pink m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 – 1/2 cup chopped pecans
1 egg
1/2 cup butter
1 tsp vanilla

We found Valentine's Day Smarties for these babies - perfect timing! Just red or just pink would have been lovely also.

Just mix all the dry ingredients in a bowl - I left the pecans out of the photo, whoops! Then add the egg, butter and vanilla. Even with my Kitchen Aid, I had to eventually work it all in by hand.

Roll them into perfect little dough balls. Then very patiently wait 10 minutes or so (in a 350 degree oven) for them to puff out and bake.

This recipe made about 2 dozen cookies.
