I am very pleased to report that our 7th recipe from Baking With Kids was as fun for the kids to make as it was for them to decorate and eat! I totally stepped back and let Wee Ones #1 & #2 do the whole thing themselves. I was impressed. Wee One #2 totally took the reigns with the decorating and they both probably ate about as much frosting as they got on the cake - but that's part of the fun, right? They made this two weeks after Wee One #3's birthday, but they still declared this yet another birthday cake for her. That meant she got the first piece so she was happy about it!
Cake:
2 cups unbleached flour
2 tsps baking powder
1 tsp baking soda
pinch salt
3 1/5 oz bittersweet chocolate
3 tbsp unsweetened cocoa
1/2 cup very hot (but not boiling) water
3/4 cups butter/Becel
1 1/4 cups sugar
3 extra large eggs
1 cup plain yogurt (not fat free)
Icing:
1/2 cup hevy cream
2 oz milk chocolate
2 oz bittersweet chocolate

Preheat the oven to 350, grease a 9" cake pan and cut a circle of parchment paper for the bottom of the pan.
Mix the flour, baking powder, baking soda, and salt.
Break up the bittersweet chocolate into a heatproof bowl.
Add the cocoa and then the very hot water. Leave this for about a minute before mixing it up.
Beat the butter and sugar until fluffy, then add the eggs and beat so it is very smooth.
Now pour in the melted chocolate and mix.
Once the chocolate has been mixed in, add the yogurt.
Now mix in the flour mixture untit it's well combined.
Bake for about an hour but check it after 30-45 minutes. All ovens are different!
The icing is too easy. Scald the heavy cream in a pot on the stove and pour it over both kinds of chocolate in a bowl. Wait a minute or so and mix!
