I love shredded chicken tacos, but I don’t always have time for the chicken to cook as long as it needs to in order for it to shred nicely. Making them in the Instant Pot, they cook in under half an hour and always turn out great!
You will need:
fresh or frozen boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 onion, diced
3 teaspoons minced garlic (or 5 cloves)
1 teaspoon black pepper
1 1/2 – 2 teaspoons cumin
1/4 teaspoon marjoram
1/2 teaspoon basil
1 tablespoon tomato paste
1 cup chicken broth
+ taco toppings and tortillas!

I literally put all the ingredients in the Instant Pot and set it to ‘pressure cook’ on high for 28 minutes.
Then I take the chicken out and shred it before adding it back into the Instant Pot with the sauce. I set it to the saute setting and cook it a little longer, just to get all the flavor in the chicken.
