Making a pot roast in the Instant Pot can save you hours of time, a couple less dishes to wash and during the warmer months, it wont heat up your house!
You will need:
2.5lb chuck roast
1 tablespoon olive oil
2 teaspoons minced garlic
1/2 small onion, chopped
4 cups beef broth
2-3+ teaspoons Italian seasoning (to your taste)
1 tablespoon corn starch
1 cup cold water

The short version of this recipe is to brown the roast in the Instant Pot on the saute setting with the oil, garlic, and onions. Then add the beef broth and set it to ‘pressure cook’ for 50 minutes.
For the gravy, I removed the roast from the Instant Pot when it was finished and used the saute setting again to heat the juices and the broth. I added the cornstarch and cold water mixture to the drippings and heated until it started to thicken up. Then I drained all the ‘bits’ out and put it back in the Instant Pot to thicken more.
