Chicken Pot Pie is a pretty easy meal to make anyway, but even easier when the chicken and potatoes are cooked together!
Using the Instant Pot to pull this together saved me time and clean up!
You will need:
5 peeled potatoes
1 teaspoon black pepper
two chicken breasts
3 teaspoons Italian seasoning
1 cup chicken stock

First, I peeled my potatoes and seasoned them with a little black pepper. I put them on the bottom of the Instant Pot. I put some parchment paper on top just to separate them from the chicken.
The chicken breasts go on top of the parchment paper and then I seasoned them with the Italian seasoning, use whatever seasonings you like best!
I set the Instant Pot to ‘pressure cook’ on high for 28 minutes.
I made the pie crust while the chicken was cooking, it’s just as good to use premade! No pressure!
Once it’s done, I shredded the chicken, roughly chopped the potatoes and added some peas and carrots to the mix as well. I added the chicken back to the Instant Pot with the veggies and then I added some gravy I had leftover. You can use whatever gravy you want!
Then I line my pie dish with the crust, add the chicken and veggie mixture and then put the pie crust top on it!
I baked it for about an hour at 350.
