One of the biggest hurdles we all have with healthy eating is time, unless of couse you either have someone to make all your meals for you or you're willing to spend your shoe / yarn / cute dress / kitchen gadget money on prepared meals and snacks. I do all the meal prep around here and there's no way I'm coughing up my little luxuries in the name of someone doing my kitchen work for me. Personally, my great weakness is pretty much any kind of 'bar'. Cereal bars, energy bars, protein bars, you name it. If it's 'healthy' and fast, I'm down. But it's only fast, right? That crap is never actually healthy *cough*GMOs are everywhere*cough*, unless of course you make it yourself from stuff you know is healthy. Before anyone jumps down my throat saying that just like with the Kashi shit storm, I could be buying ingredients I believe to be safe when they are actually non-organic or genetically modified, I get that. All any of us can do is try, and frankly even if I end up with non-organic or GMO ingredients, my finished product is miles less processed than any cereal bar and has zero preservatives.
These bars are a take on a popular breakfast bar you'll likely recognize after you make and eat one of these. As always, I'm not posting recipes from THE BOOK (cue angles singing), but I will assure you that these will last a few days in the fridge wrapped up in tin foil and were great on a picnic afternoon and super easy to reach for the next morning when I wasn't feeling making breakfast for myself!
