Lucky 13! This is the 13th recipe I've made from Jessica Seinfield's sneaky veggie book and it was just ok. I'm not sure if it's the concept of meatloaf, or maybe just too many liquidy ingredients but it didn't come together the way my standard meatoaf usually does. The hit of vitamins from the carrots was a plus but if I make this again I will probably not use any ketchup. We all liked the onions and celery being cooked first to bring out more flavor though! That's something I will repear in the future for sure.

First, soak the breadcrumbs in milk. While that's happening, heat a skillet or frying pan and add the oil, then add the onion and cook about 10 minutes. Now add the celery and cook a few minutes longer. Add this mixture to the breadcrumbs and milk.

Mix to combine. Then add the ground turkey.

Now top it off with the parm, carrot puree, ketchup, salt and pepper. Mix, mix, mix!

Spread the tomato sauce over the top. Lay the strips of bacon over that.

Cook in a 350 degree oven for about 45 minutes, once the meatloaf is cooked and the bacon is browning. Let it set for a bit and then slice it up. I served it with the Rice Balls from the same cookbook.
