Recipe #11 from Deceptively Delicious was only eaten by me - and I really liked it. Yogurt and cauliflower puree are snuck in (with a little low fat mayo to make it less obvious), and the celery is there for a bit of a crunch. It's not really far off from how I'd usually make it, but the addition of the cauliflower is a great nutrition boost! I know the grapes are good too but I didn't have any on hand so I made it without them.
2 large eggs
1 lb boneless, skinless chicken breast
1 tsp salt
1/4 tsp chili powder
1/4 tsp sweet paprika
1/4 tsp garlic powder
1 tsp olive oil
3/4 cup reduced-fat mayonnaise
2 stalks celery, finelt chopped
1/2 cup cauliflower puree
1/2 cup nonfat plain yogurt
1/2 cup grapes, coarsely chopped
Boil the eggs before you get going so they are cooling off right now. You can chop the chicken now or cook the pieces whole and chop later, either way, start the pan off with the olive oil and season with the chili powder, paprika and garlic powder.
In a smallish bowl, stir together the mayonnaise, celery, yogurt, cauliflower puree, and grapes (if you're using them).
Now add the chicken and eggs.
Mix to incorporate it all.
Please don't wreck this by eating it on white bread - even enriched white bread.
Go full tilt, ancient grain or 12 grain or something with a whole lot of nuts or grain on it. Yum!!
