Man these are good. I love Rolos, and of course you already know I love chocolate chip cookies, so after I stuffed a mini brownies into chocolate chip cookies earlier this year, why not a Rolo?

I'm not sure when or how, but I am head over heels for My Baking Addiction, and it was there that I discovered this recipe. I made a batch for a birthday party and gave some as birthday gifts too and they were extremely well received. Plus I ate about 10 of them in a single sitting. I know, but they're that good.

Rolo Stuffed Chocolate Chip Cookies - from My Baking Addiction
1 1/2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
1 tbsp vanilla
2 eggs
3 3/4 cup flour
2 tsp baking soda
1 tsp salt
2 cups semi sweet chocolate chips
3/4 cup chopped pecans <- I left these out
30 frozen Rolos <- really, make sure they're frozen

Preheat oven to 350. Cream together butter, sugars, vanilla and eggs until lighty and fluffy. Now add flour, baking soda and salt.

Mix in chocolate chips and pecans if you're using them.
Now the fun part. Make a dough ball from a little more than 1 tablepsoon of dough and flatten it out a little. Then plunk a frozen Rolo on top and shape the rest of the dough around it.

Make sure it's covered on all sides and you can't see it poking out at all. Mmmmm. Rolo stuffed dough balls!

Pop them in for 10-15 minutes. All done! One or two of them may spring a leak. That's ok, that's just your kitchen's way of telling you which ones you should be snacking on.

Wowzers. So gooey and good. I didn't tell anyone I gave these to that there was a surprise inside. They were all pleased.
