peanut butter balls

Yet another recipe our 5 year old wanted to try out. You'd think that cooking and baking her way through the Baking with Kids cookbook would be enough for her but no, she also wants to pick (and then make) the cookie of the week most of the time. This time, I reasoned with her that while these peanut butter balls are technically from a cookie cookbook, they're not a cookie so will not be counted towards our cookie count for 2011. These taste a lot like peanut butter cups, especially if you don't roll them in anything at all though the recipe calls for them to be rolled in chopped peanuts and Wee One #2 wanted to roll them in sprinkles.

First Wee One #2 reads the recipe, of course! Icing sugar and graham cracker crumbs, tossed.

Add the butter and peanut butter and mix till combined. Roll the dough into ball, wet your hands a little to make it easier.

You should get about 60 1" balls out of this recipe. Melt the chocolate in a heat-proof bowl over a pan of simmering water and add the vegetable oil. Use this to coat the peanut butter balls.

Wee One #2 wanted to use muti-coloured sprinkles instead of chopped peanuts. Let them set up for a bit until they're dry. They keep well in the fridge!

These are as loved by adults as little kids. So good.
