Yes. Homemade Nutella. That's what I said. We are a Nutella loving household and, as you probably know by now, I've developed a (possibly beyond) healthy fear of chemicals in food. Especially food we give to the kids, so aside from banning everything they love, I've just started making everything they love from scratch (stay tuned for homemade fruit by the foot). Nutella was at the top of the list, mainly because we eat quite a bit of it and because there are just too many ingredients I can't pronounce. When I made this, I didn't strain the bits of nuts from the final product so we've got an extra dose of fiber! My father is probably the best chocolate judge in my life at the moment and he LOVED it. Just as the original recipe notes, it is runny at first but it sets up nicely in the fridge and the consistancy is exactly like the real thing.

Homemade Nutella - from The Family Kitchen at Babble
1 1/2 cup whole hazelnuts
1 1/2 cups whole milk
3/4 cup powdered milk
1 tbsp honey
1 heaping cup chopped bittersweet or semisweet chocolate
1 scant cup chopped milk chocolate

Roast your hazlenuts in a 400 degree oven for about 10 minutes. Rub the hazlenuts together in a towel while they're still hot to get as much of the skin off as you can easily - don't go picking at them.

Pulse the nuts in the food processor while they're still warm. At first they just crumble like this...
...but after a little bit it'll start to look like raw peanut butter.

In a medium saucepan, headt the milk and powdered milk. Then add the honey and salt and bring to a boil. Remove it from heat.

Melt the chocolate however you prefer. Nuke it if you want to - I tend to melt it in a stainless steel bowl over a pan of simmering water. Mmmmm, partially melted goodness.

When the chocolate is smooth and melty... Add it to the pureed hazlenuts and pulse your food processor.

It'll be runny and speckled and delicious. Take the processor's lid off, and scrap down the sides. Then put it back on and add the milk mixture.

Once it's all mixed together you're ready to pour it into a jar and pop it in the fridge. I didn't touch it overnight and by morning it had set up like store bought Nutella.
