Recipe number 6 from Baking With Kids and Wee One #2 couldn't be more pleased with herself. Her brother wasn't into baking today so she was on her own and more than happy to tackle this recipe without him. She had a slice after supper and when she woke up the next day it was almost gone - the grown ups loved it!!

Orange Cake - from Baking With Kids (p. 44)
1 unwaxed orange
1 11/2 sticks unsalter butter, very soft
1 1/4 cups sugar
3 extra large eggs, room temp
2 cups flour
1 tsp baking soda
1/2 cup milk
3 tbsp plain yogurt
3 tbsp sugar (for topping)

She is an expert pan greaser by now! Preheat the oven to 350. The recipe called for living the pan with parchment paper. We thought we might need two, but one was enough.

I sliced the orange in half, pulled as much of the white parts off as I could and cut half of it into sections. Save the other half. Then they go in the blender, rind and all!

Now add the butter and the sugar and mix. Add eggs. Mix in the flour and baking soda.

Then add the milk and yogurt and mix again till it's combined. Pour the batter into your prepped loaf pan and bake at 350 for 50 minutes (ours took closer to 40).

Now comes the topping. Squeeze out the juice from the orange half you saved and mix with the 3 tbsp of sugar. Pour the topping over the cake!
